Cardoon, chicory, endive, curly lettuce, chicons, winter cabbage, fennel, Brussels sprouts, chives, winter lettuce, lamb's lettuce, leeks, salsify, thyme, etc.
  Sophie's secrets for the month of January....
Be sure to cover lamb's lettuce before the first frosts! Covering them with dead leaves is a very effective method! During cooking, lamb's lettuce tends to lose its colour so blanch it briefly in salted boiling water and then put it into iced water. This preserves its « good looks ».
Lettuces demand a lot of water so take care to keep the soil humid as growth has to be as fast as possible to avoid them « going to seed » or developing flowers rather than leaves.
